Banana Bread


Makes about 12 servings

What you need:

2 cups all-purpose flour

(or 1 each of all-purpose and whole wheat)

¼ cup white sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon baking soda

½ teaspoon salt

1 cup old-fashioned oats (plus 2 teaspoons)

½ cup milk

1 cup mashed bananas

2 eggs, beaten

½ cup vegetable oil

How you do it:

Preheat oven to 350 degrees Fahrenheit.

Generously grease a 9 x 5 inch loaf pan so your banana bread won't stick.

In a large bowl, stir together flour, sugar, baking powder, cinnamon, baking soda and salt.

In a separate bowl, mix cup of oats, milk, bananas, eggs and oil.

Spoon wet mixture into dry mixture and combine gently.

Carefully spoon batter into loaf pan. Sprinkle top of batter with oats.

Bake for about one hour. An adult can help to test for doneness.
