Let's Make Pancakes


Pancakes are relatively easy to make, taste great, and the few minutes of extra prep time makes them an extra special treat. Your kids will love watching the batter bubble before it’s time to flip. It’s also a great opportunity to encourage creativity as they concoct fun topping ideas.

Makes 8 4-inch diameter pancakes

2 tablespoons white vinegar
¾ cup milk
1 cup all purpose flour
1 tablespoon white sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon cinnamon
1 egg, beaten
Butter or cooking spray

Add vinegar to milk, and set aside. Combine all the dry ingredients in a mixing bowl. Pour milk and beaten egg into dry ingredients and mix well. Heat a frying pan over medium heat and melt a teaspoon of butter in pan or spray lightly with cooking spray. Use a measuring cup or ladle to make pancakes evenly sized. (Using a ¼ cup of batter per pancake will make about 6 pancakes.) Flip pancakes when you see several bubbles on the pancake’s surface. Be patient, as these pancakes need time to rise and become fluffy.

Creative Topping Ideas

Fruit on the Bottom: Thinly layer sliced strawberries below pancakes, sprinkle with powdered sugar and top with plain yogurt.

Southern Pecan Pralines: Top pancakes with toasted pecan pieces and a sprinkling of brown sugar with whipped butter.

PB&J Time: Use crunchy peanut butter and grape jelly to make a pancake sandwich.

Pineapple Upside Down Cakes: A pineapple ring, sprinkle of brown sugar and maraschino cherry are cooked into the pancake. Top with whipped cream.

Snuggly Sleeping Sausages: Placed cooked link breakfast sausage on a small pancake. Roll pancake around sausage and serve on a plate with the seam side down.
