Savor Summer with a Staycation

Sometimes there is no time or money for a vacation. While some may be accustomed to multiple course breakfasts on cruise ships or decadent meals at bed and breakfasts, one sure way to make a staycation special is by taking the time to make a luxurious breakfast. This recipe for crepes is easy and uses simple ingredients. Serve these with some nice seasonal berries or jam, a glass of fresh orange juice, a newspaper and a bud vase with flowers snipped from the backyard to enjoy the good life at home.

Easy Crepes

Makes approximately 8 crepes

2 eggs
1 cup milk
2/3 cup all-purpose flour
1 pinch salt
1 1/2 teaspoons vegetable oil

1. In a bowl combine eggs, milk, flour, salt and oil. Stir well.

2. Heat a non-stick skillet over medium-high heat. Pour 1/4 cup of
crepe batter into skillet, quickly tilting skillet to coat the bottom of the pan.

3. Cook 3 to 4 minutes, until golden and firm. Flip and cook until golden. Repeat with remaining batter.

4. Serve with fruit, jam, chocolate sauce or other fillings.
