Strawberry Oatmeal Jam Bar Recipe


Here in Minnesota we are deep into winter, which means we won't see fresh fruits for quite some time. One way to enjoy fruit when it is out of season where you live is to use preserved fruits, such as jams or jellies. Here's a delicious way to enjoy preserves that will make a great addition to any lunch box. 

Strawberry Oatmeal Jam Bars

Makes 12 servings.


•½ cup brown sugar
•1 cup flour
•¼ teaspoon baking soda
•¼ teaspoon salt
•1 cup rolled oats
•½ cup butter, softened
½• cup strawberry jam
•cooking spray or oil


Preheat oven to 350 degrees Fahrenheit (or 180 degrees Celsius). Generously grease an 8” x 8” pan. In a medium bowl, combine all dry ingredients and then cut in butter until mixture has a sand-like texture. Press two cups of mixture into the pan to form crust. Microwave jam briefly for 15-30 seconds, and then spread on top of crust. Top with remaining oatmeal mixture. Bake for 35 to 40 minutes or until topping is golden brown. Allow to cool before slicing.

To make this easier and neater, combine dry ingredients and butter in a zipper top plastic bag. Squeeze air out of bag and zip, and then allow children to knead mixture right inside the bag.
